HOMEMADE PAPADZULES (Tortilla with hard-boiled egg and pumpkin seed sauce)

Los papadzules son un platillo tradicional de la gastronomía de la Península de Yucatán, en México. El nombre significa, según algunos mayistas, el alimento del amo (del maya papa, alimento, y dzul, amo o caballero no perteneciente a la clase popular), o bien embarrado y remojado (de papak, embarrar, y zul, remojar). Son un platillo mestizo, con claras influencias indígenas.
Es un plato relativamente sencillo que consiste de tortillas de maíz remojadas en una salsa de pepitas de calabaza, y rellenas de huevo cocido (a manera de tacos) y bañadas finalmente en una salsa de tomate con chile habanero y cebolla. Pueden adornarse con cebolla morada y chile habanero picados. Es un guiso común en los estados de Yucatán, Campeche y Quintana Roo, pero fuera de la península son relativamente poco conocidos. A excepción de una pequeña aldea situada al noreste del estado de Hidalgo.
